April 2005 Minutes

1. The meeting was brought to order by President Vicky Turner.

2. Reading the minutes from the previous meeting was suggested. Instead, the minutes will be emailed to the Board members for approval and copies will be available to all members at the next months meeting, (as well as printed in the newsletter).

3. The Southeast 2006 Regional Committee has been hard at work. The next Regional meeting will be held on May 2nd at 6:30 at the Hyatt Regency Hotel in Savannah, GA.

4. We are looking for a place to hold our Annual Golf Tournament. Up to date, this has been the chapter’s largest fundraiser.

5. The chapter has not had a Family Picnic since 2003. This could be an event of food, fun and fellowship. If anyone is interested in hosting or has good ideas for a location, please contact Chef Hillary at 912.688.6030.

6. OFFICERS: William Turner, of Pastry Passions Café has stepped down as Vice President. Roger Michelle, Executive Chef of the Westin has stepped down as Treasurer. Kyle Latsha, of the Inn at Palmetto Bluff has been nominated for Sergeant-at-Arms. Kyle was approved by the Board for this position.

7. The education was presented by US Foods. Representatives from Harbor Banks presented on the difference between dry and wet scallops, crab meat and a wide variety of seafood options. We thank them for a plethora of information, as well as the free samples.

8. Thank you to all members in attendance and we hope to see more of you at next month’s meeting at Savannah Electric...next month...DOOR PRIZES!!!

February 2005 Minutes


ACF Board & General Meeting
1. The meeting was brought to order by Chairman of the Board, Chef Stephen Minton. Vicky Turner accepted the Presidency of ACF Savannah, as Chef Art has declined the position.

2. Chef Stephen gave an update on the 2006 Regional. ACF Savannah will have a booth at the 2005 Regional in Roanoke,VA .There will be a survey available so we can gauge interest in education at the Savannah Regional. ACF Savannah is setting up a website to be used for the Regional. It will be set up and maintained for one year. After that, it is the chapter's decision whether to keep it running.

3. The date and location of the Chef 's Ball is still undecided. The issue has been tabled until the next meeting.

4. ACF Savannah needs a new Educational Committee .The committee is responsible for finding educational programs and meeting sites that are appropriate. Chef Hillary Gallagher volunteered to chair the new committee, with President Vicky Turner offering assistance.

5. ACF Savannah needs a Membership Chair and Committee .As there were no volunteers at the meeting, the issue was tabled.

6. As Vicky Turner has accepted the role of President ,per the by-laws, she has nominated William Stevens as Vice President . This decision was passed by the Board. This leaves a vacancy in the Sergeant-at-Arms post. As no one at the meeting was willing to accept a nomination, it was wisely suggested by Chef Wolfgang Bierer that the chapter rotate the position per meeting. This issue was voted on and passed.

7. The regular meeting was adjourned by Vicky Turner .

8. President Vicky Turner welcomed our special guest, Chef Bierer,CEC,CCE,CMPC .Chef Bierer will again be a judge at the Magnolia Coastland Culinary Challenge and was in attendance to discuss competition criteria. Chef Bierer discussed everything from professionalism to sanitation, with an emphasis on "keep it simple ".A big thanks to Chef Bierer for easing the minds of some of the competitors, and reinforcing what we all sometimes forget," Good Food Cooked Properly "

November 2004 Minutes

ACF Board & General Meeting
Meeting was called to order by Chef Stephen.

1. Thank you to Barnes Restaurant for hosting the meeting.

2. Nominations for office. President -Chef Art of Savannah Technical College Vice President -Vicky Turner Treasurer -Chef Roger Michel of The Westin in Savannah Chef Marvis Hinson of Savannah Technical College Secretary -Chef Hillary Gallagher of Ogeechee Technical College Sergeant at Arms -No current nominees

3. Chef and Child ,finished class with Second Harvest . Several members showed an interest in helping with this program.

4. By-Laws were passed for the chapter. Of the members in attendance,5 voted for the by-laws to be passed and no members opposed. Policies and procedures will be worked on and voted by the new Board.

5. It was voted by the members to move the Chef 's Ball to the end of April. In the meantime, ask your vendors for donations. Please give donation lists to Chef Marvis and she will meet with the chef of the property and together they can develop a menu.

6. Royalty Food 's 2nd Annual Magnolia Coastland Challenge will be held February 21st -22nd at the Hyatt. On February 7th ,Chef Wolfgang Bierer (one of the judges)will demonstrate what the judges are looking for. Georgia Power is donating $500.00 Chef Nick Muller ,last report for more details.

judges are looking for.Georgia Power is donating $500.00 Chef Nick Muller ,last year 's winner,has a guaranteed slot,as does the host property.There are 14 slots available and all Chefs and Cooks in the area are welcome to throw their name in the hat.There is a $100.00 application fee;this is refundable for members only .Tim Rutherford will be accepting applications starting on December 1st .There will be a pre-competition meeting on October 20th .See the competition

7. Fund Raiser Dinner. In conjunction with the OTC Foundation, ACF will hold a dinner in Statesboro, which has been approved. The fund raiser will be held at the Forest Heights Country Club .Up to $2,000.00 the profits will be split 50/ 50.After that, the monies will be split 90%OTC Foundation ,10%ACF .The monies will be earmarked for a scholarship for a culinary student. More information will be available as soon as a date is chosen.

8. New Business. Congratulations to Savannah Tech for placing 5th in the Florida State Student Team Championships.

9. Thanks to the guys from IFH for their informative seminar on the state of imported products. They had knowledge on crops, use and the cost of importing.
